INGREDIENTS
7 ounces Pork Tenderloin (200g)
1 medium Carrot (100g)
1 small Apple (80g)
1 teaspoon Extra Virgin Olive Oil
2 sprigs Fresh Rosemary
2 sprigs Fresh Thyme
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Pat the pork tenderloin dry with paper towels. Rub it with salt, pepper, chopped rosemary, and thyme.
Slice the carrot into sticks or rounds, and core and cut the apple into wedges.
On a rimmed baking sheet, arrange the pork in the center and surround with the carrot pieces and apple wedges. Drizzle the vegetables and fruit with olive oil and season lightly with salt and pepper.
Roast in the preheated oven for about 20-25 minutes, or until the pork reaches an internal temperature of 145°F and the vegetables are tender with a slight caramelization.
Remove from the oven, let the pork rest for 5 minutes, then slice and serve with the roasted carrots and apples.
