350g Extra Firm Tofu
150g White Button Mushrooms
100g Green Beans
1 tbsp Olive Oil
2 cloves Garlic
Salt and Pepper to taste
PREPARATION
Press the tofu for at least 15 minutes to remove excess water, then cut it into bite-sized cubes.
Heat half of the olive oil in a non-stick pan over medium-high heat. Once hot, add the tofu cubes and lightly season with salt and pepper. Fry them until all sides get a crispy golden brown crust. Remove tofu and set aside.
In the same pan, add the remaining olive oil and add the sliced mushrooms. Sauté until they turn soft and begin to brown. Season with a pinch of salt and pepper.
Add the garlic (minced or thinly sliced) to the mushrooms and sauté briefly until fragrant.
Toss in the green beans and sauté for 3-4 minutes until they are tender-crisp, making sure they’re evenly coated with the garlic and mushroom flavors.
Return the crispy tofu to the pan and gently toss to combine all components. Adjust seasoning if necessary and serve warm.
