INGREDIENTS
1 cup grated zucchini (124g)
2 large eggs (approx. 100g total)
1 scoop whey protein powder (30g)
1/4 cup rolled oats (20g)
1/4 cup nonfat plain Greek yogurt (57g)
1 tbsp chopped walnuts (7g)
1 tbsp raisins (9g)
1 tsp baking powder (4g)
1 tsp cinnamon (2.6g)
1 tsp vanilla extract (4.2g)
PREPARATION
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease with a cooking spray.
In a large mixing bowl, combine the grated zucchini, eggs, Greek yogurt, and vanilla extract. Whisk until well incorporated.
Stir in the whey protein powder and rolled oats, mixing until fully combined.
Fold in the chopped walnuts, raisins, baking powder, and cinnamon until evenly distributed throughout the batter.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature.
