This recipe masterfully balances natural sweetness, smoky umami, and creamy textures, making it an ideal meal for any time of the day.
INGREDIENTS
1 medium Sweet Potato (114g)
3 slices Bacon (approx. 24g total)
1 ounce Cheddar Cheese (28g)
3 portions Egg Whites (approx. 99g total)
1/4 cup Low-Fat Cottage Cheese (60g)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C). Wash the sweet potato, prick it with a fork, and bake it for about 45 minutes until tender.
While the sweet potato is baking, cook the bacon in a pan over medium heat until it is crispy. Once done, crumble the bacon into small pieces.
Lightly season the baked sweet potato with salt and pepper. Carefully slice open the top and gently scoop out a small portion of the flesh to create a cavity for the filling.
Fill the cavity with the crumbled crispy bacon and sprinkle the cheddar cheese evenly on top.
Place the stuffed sweet potato back in the oven or under a broiler for 3-5 minutes until the cheese is melted and bubbly.
In a small non-stick pan, gently warm the egg whites until they are softly scrambled, then spoon them on top of the melted cheese.
Finish by adding a dollop of low-fat cottage cheese on the side or on top, seasoning with a final pinch of salt and pepper if needed, and serve warm.
