INGREDIENTS
150g Cauliflower Florets
150g Russet Potato
3 Garlic Cloves
1 tsp Olive Oil
0.75 cup Plain Nonfat Greek Yogurt
0.5 cup Low-Fat Cottage Cheese
Salt & Pepper to taste
1 tbsp Fresh Chives (garnish)
PREPARATION
Preheat your oven to 400°F (200°C). Peel the garlic cloves, drizzle them with a tiny bit of olive oil, and wrap in foil. Roast in the oven for 20-25 minutes until soft and caramelized.
Meanwhile, steam the cauliflower florets and diced potato until tender, about 15-20 minutes.
Once cooked, transfer the cauliflower and potato to a large bowl. Squeeze in the roasted garlic, ensuring to discard any tough skins.
Add the plain nonfat Greek yogurt and low-fat cottage cheese. Drizzle in the olive oil and season with salt and pepper.
Mash everything together with a potato masher or blend with an immersion blender until smooth and creamy, retaining a bit of texture if desired.
Transfer to a serving bowl and garnish with freshly chopped chives. Serve warm and enjoy!
