INGREDIENTS
1 cup Cauliflower Florets (107g)
1 serving Potato (100g)
1 cup Plain Nonfat Greek Yogurt (250g)
1/2 cup Low-Fat Cottage Cheese (113g)
1 Roasted Garlic Clove
1 teaspoon Extra Virgin Olive Oil
Salt & Pepper to taste
1 tablespoon Fresh Chives
PREPARATION
Preheat your oven to 400°F (200°C). Place the garlic clove (still in its skin if preferred) on a piece of foil, drizzle with a few drops of olive oil, and wrap loosely. Roast in the oven for 25-30 minutes until soft and fragrant.
Meanwhile, steam or boil the cauliflower florets and diced potato until both are tender, about 10-12 minutes.
Once cooked, drain the vegetables and transfer them to a large bowl.
Squeeze the roasted garlic out of its skin and add it to the vegetables.
Add the Greek yogurt and low-fat cottage cheese to the bowl. Drizzle in the teaspoon of olive oil and season with salt and pepper.
Mash the mixture using a potato masher or blend it briefly for a smoother texture, stirring until well-combined and creamy.
Finish by folding in fresh chopped chives. Adjust seasoning if necessary and serve warm.
