150g Cauliflower (riced)

0.5 tsp Garlic Powder
0.5 tsp Dried Italian Herbs

PREPARATION
Preheat your oven to 425°F (220°C) and line a small baking sheet with parchment paper.
Steam or microwave the cauliflower until tender. Once cooled, pulse in a food processor until it resembles rice.
Transfer the cauliflower rice to a clean towel and squeeze out excess moisture.
In a bowl, combine the cauliflower rice with the egg, shredded mozzarella, grated parmesan, almond flour, and cottage cheese. Stir in garlic powder and dried Italian herbs. Mix until a cohesive dough forms.
Transfer the mixture onto the prepared baking sheet. Using your hands, press and shape it into a rectangular, breadstick-like form about 1/2 inch thick.
Brush the top lightly with olive oil and, if desired, sprinkle a pinch additional garlic powder or herbs.
Bake for 15-20 minutes until the edges become golden and the breadstick is firm.
Once done, remove from the oven and allow to cool slightly before slicing into breadstick segments. Garnish with fresh parsley if desired and serve warm.
