1.5 cups Almond Flour (~144g)
6 large Eggs
1 cup Low-Fat Cottage Cheese
1/2 cup Grated Parmesan Cheese
4 cloves Roasted Garlic
1 tbsp Fresh Rosemary, chopped
1 tbsp Fresh Thyme, chopped
1 tbsp Olive Oil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
Break the cauliflower into florets and pulse in a food processor until you achieve a rice-like texture. Lightly steam the cauliflower rice for about 3-4 minutes to soften, then allow to cool.
