Enjoy a savory dish featuring tender chicken breast seasoned with garlic and fresh herbs, crisped to perfection and paired with sweet, caramelized Brussels sprouts. This meal balances robust flavors with a satisfying crunch, making it a delightful option for a wholesome dinner.
INGREDIENTS
6 oz Chicken Breast (170g)
1 cup Brussels Sprouts (88g)
2 tsp Olive Oil (9g)
2 cloves Garlic (6g)
1 tsp Mixed Fresh Herbs
1 tbsp Lemon Juice
Salt & Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Pat the chicken breast dry with paper towels. Season both sides with salt, pepper, and the mixed fresh herbs.
Heat a non-stick skillet over medium-high heat and add 1 teaspoon of olive oil. Sear the chicken breast for about 2-3 minutes on each side until a golden crust forms.
Transfer the chicken to a baking sheet and place in the oven. Bake for an additional 10-12 minutes until the internal temperature reaches 165°F.
Meanwhile, halve the Brussels sprouts and toss them in a bowl with the remaining olive oil, minced garlic, a squeeze of lemon juice, salt, and pepper.
Spread the Brussels sprouts on a separate baking tray and roast in the oven (you can place them alongside the chicken if space allows) for 15-20 minutes, stirring halfway through, until caramelized and tender.
Once both the chicken and Brussels sprouts are done, plate them together and drizzle with a little extra lemon juice if desired. Serve warm.
