INGREDIENTS
200g Button Mushrooms
6 oz Shrimp (peeled & deveined)
2 Tbsp Unsalted Butter
3 cloves Garlic
4 Tbsp Fresh Parsley
1 tsp Fresh Thyme
1 tsp Lemon Juice
Salt and Black Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Clean the mushrooms with a damp cloth and halve them if large.
Melt 1 tablespoon of butter in an oven-safe skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Add the mushrooms to the skillet, season with salt and pepper, and sauté for 3-4 minutes until they start to brown.
Transfer the skillet to the preheated oven and roast for 8-10 minutes until mushrooms are tender.
Meanwhile, in a separate pan, melt the remaining butter over medium heat. Add the shrimp and cook for 2-3 minutes per side until pink and cooked through. Squeeze in lemon juice during the last minute of cooking.
Remove the mushroom skillet from the oven. Stir in the fresh parsley and thyme.
Plate a serving of roasted mushrooms and top with the garlic-butter shrimp. Adjust seasoning with salt and pepper as desired and serve immediately.
