Enjoy a velvety smooth mash that combines the natural creaminess of cauliflower and potato with the zesty depth of roasted garlic. Enhanced with nonfat Greek yogurt and fat-free cottage cheese, this comforting mash is a satisfying blend of textures and flavors, perfect for any meal of the day.
INGREDIENTS
1 cup chopped Cauliflower (107g)
1 medium Potato (150g)
1 head Roasted Garlic (15g)
1 cup Nonfat Greek Yogurt (245g)
1/4 cup Fat-Free Cottage Cheese (62g)
1 tsp Olive Oil (5g)
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F. Slice the top off a head of garlic, drizzle it lightly with olive oil, and wrap in foil. Roast in the oven for about 30-35 minutes until soft and fragrant.
Meanwhile, cut the cauliflower into florets and peel a medium potato, cutting it into cubes. Place them in a pot of boiling water and cook until both are tender, about 15-20 minutes.
Drain the vegetables and transfer them to a large mixing bowl. Squeeze the roasted garlic cloves out of their skins and add them to the bowl.
Add the nonfat Greek yogurt and fat-free cottage cheese to the vegetables. Mash everything together until you achieve a smooth, creamy consistency.
Drizzle in the olive oil and season with salt and pepper to taste, stirring thoroughly to combine all flavors.
Serve warm as a comforting side dish or a light main course.
