INGREDIENTS
6 oz Top Sirloin Steak (approx. 170g)
100g Baby Potatoes
1 tsp Unsalted Butter
1 clove Garlic
1 sprig Fresh Rosemary
Salt & Black Pepper to taste
PREPARATION
Pat the steak dry and season generously with salt and black pepper on both sides.
Preheat a heavy skillet or cast iron pan over medium-high heat until it is very hot.
Add the steak to the pan and sear for 3-4 minutes on each side for medium-rare, adjusting timing for desired doneness.
While the steak is searing, toss the baby potatoes with a little olive oil, salt, and pepper, and roast them in a preheated oven at 400°F (200°C) for about 20-25 minutes until tender and crisp on the outside.
In the last minute of cooking the steak, add the butter, minced garlic, and a sprig of fresh rosemary to the pan. Baste the steak with the melted herb-garlic butter.
Remove the steak and let it rest for a few minutes before slicing. Serve alongside the roasted baby potatoes.
