Heat the teaspoon of olive oil in a large non-stick skillet over medium heat.
Add the diced sweet potato to the skillet. Sauté for about 5-7 minutes or until they start to soften.
Add the chopped bell pepper and onion to the skillet and continue cooking for another 3-4 minutes until the vegetables are tender.
