Creamy Cajun Chicken Pasta with Bell Peppers
Enjoy a flavorful twist on a classic pasta dish, featuring tender Cajun-spiced chicken breast tossed with whole wheat pasta, crisp bell peppers, and a light creamy sauce for a satisfying and balanced meal.
INGREDIENTS
4 ounces Chicken Breast
2 ounces Whole Wheat Pasta
1 cup sliced Red Bell Pepper
2 tablespoons Light Cream Cheese
1 teaspoon Olive Oil
1 teaspoon Cajun Seasoning
1 clove Garlic (minced)
PREPARATION
Cook the whole wheat pasta according to package directions until al dente. Drain and set aside.
Season the chicken breast with Cajun seasoning on both sides.
Heat olive oil in a pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the seasoned chicken breast to the pan and cook for 5-6 minutes per side until fully cooked and slightly charred. Remove the chicken from the pan and let it rest for a couple of minutes before slicing it into strips.
In the same pan, add the sliced red bell pepper and sauté for 2-3 minutes until they begin to soften.
Lower the heat and stir in the light cream cheese until it melts and forms a creamy sauce. If needed, add a splash of water or low-sodium chicken broth to achieve desired consistency.
Return the sliced chicken to the pan and add the cooked whole wheat pasta. Toss everything together until well coated in the creamy sauce.
Adjust seasoning if necessary, then serve immediately while warm.
