Preheat your oven to 425°F. Line a baking sheet with parchment paper.
Rice the cauliflower by processing 200g of raw cauliflower in a food processor until it resembles rice. Steam or microwave the riced cauliflower for 4-5 minutes to soften.
Transfer the cooked cauliflower to a clean kitchen towel and squeeze out as much moisture as possible.
In a bowl, combine the drained cauliflower, 1 large egg white, 1 tbsp almond flour, 1/2 tsp garlic powder, 1/2 tsp dried oregano, and a pinch of salt. Mix until a cohesive dough forms.
Press the cauliflower mixture evenly onto the prepared baking sheet, shaping it into a thin crust.
Bake the crust in the preheated oven for 15-20 minutes, or until it starts to turn golden and firm up.
Remove the crust from the oven and spread 1/4 cup tomato sauce over it. Top with 40g turkey pepperoni and sprinkle 1/4 cup low-fat mozzarella cheese evenly over the pizza.
Drizzle 1 tsp of olive oil on top to add a touch of richness.
Return the pizza to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven, slice, and enjoy your healthy, protein-packed cauliflower crust pizza!
