INGREDIENTS
4 oz Chicken Breast
2 cups Romaine Lettuce
1/3 cup Chickpeas
2 Tbsp Light Caesar Dressing
1 Tbsp Parmesan Cheese
1 tsp Olive Oil
1 tsp Mixed Dried Herbs
Salt & Black Pepper to taste
PREPARATION
Preheat your grill or grill pan over medium-high heat.
In a small bowl, combine olive oil, mixed dried herbs, salt, and black pepper. Brush the chicken breast evenly with the herb mixture.
Grill the chicken breast for about 6-7 minutes per side or until fully cooked and lightly charred. Allow to rest before slicing.
While the chicken is grilling, preheat your oven to 400°F for the chickpeas.
Rinse and drain chickpeas, then toss them with a pinch of salt, pepper, and a light spray of olive oil. Spread them on a baking sheet and roast for 20-25 minutes until crispy, stirring halfway through.
In a large bowl, toss the romaine lettuce with the light Caesar dressing.
Slice the grilled chicken into strips and add to the salad along with the roasted chickpea croutons.
Top with a sprinkle of grated Parmesan cheese and serve immediately.
