1 medium Sweet Potato (approx 114g)
1 ounce Dark Chocolate (70% cocoa, approx 28g)
1 scoop Whey Protein Powder (approx 30g)
PREPARATION
Preheat your oven to 350°F.
Pierce the sweet potato with a fork and microwave it on high for 5-7 minutes until soft, or bake it until tender. Once cooked, peel and mash the sweet potato in a bowl until smooth.
Melt the dark chocolate gently using a double boiler or in short bursts in the microwave, stirring until smooth.
In another bowl, beat the eggs lightly. Stir in the whey protein powder until well combined.
Combine the mashed sweet potato with the melted dark chocolate and the egg-protein mixture. Mix well until the batter is uniform.
Pour the mixture into a greased or lined small baking pan, spreading it evenly.
