INGREDIENTS
5 oz Ground Pork (85% lean)
1 large Egg
40 g Rice Noodles (dry)
1 tbsp Fresh Ginger, grated
2 cloves Garlic, minced
1/2 medium Red Bell Pepper (sliced)
2 tbsp Scallions (chopped)
1 tbsp Low-Sodium Soy Sauce
1 tsp Sriracha Sauce
1 tsp Sesame Oil
PREPARATION
Soak the rice noodles in warm water for about 10 minutes until pliable, then drain and set aside.
In a small bowl, combine the soy sauce and sriracha. Set aside to blend the flavors.
Heat the sesame oil in a skillet over medium heat until shimmering.
Add the grated ginger and minced garlic to the skillet and sauté for about 30 seconds until fragrant.
Add the ground pork to the skillet, breaking it apart as it cooks. Sauté until the pork is browned and cooked through.
Stir in the sliced red bell pepper and continue to cook for an additional 2 minutes until slightly tender.
Push the pork and vegetables to the side of the skillet and crack the egg into the space, scrambling it gently until just cooked.
Toss the soaked noodles into the skillet and pour the soy-sriracha mixture over the top. Mix everything thoroughly until the flavors are well combined and the noodles are evenly coated.
Garnish with chopped scallions and serve immediately.
