PREPARATION
Preheat your oven to 400°F.
Peel (if desired) and dice the sweet potato into small, even cubes. Toss with 1 teaspoon olive oil, salt, pepper, and Italian herbs, then spread onto a baking sheet.
Roast the sweet potato cubes in the preheated oven for 20-25 minutes until tender and lightly browned.
