Enjoy a perfectly seared salmon fillet encrusted with aromatic herbs, paired with tender roasted broccoli. This dish offers bright, fresh flavors with a crisp finish, ideal for a satisfying and balanced meal.
INGREDIENTS
5 oz Salmon Fillet
2 cups chopped Broccoli
1 tbsp Olive Oil
2 tbsp Fresh Parsley (chopped)
1 tsp Fresh Thyme (chopped)
1 tsp Garlic Powder
Salt and Black Pepper to taste
1 Lemon Wedge
PREPARATION
Preheat your oven to 425°F.
On a baking sheet, toss the chopped broccoli with half of the olive oil, salt, and pepper; roast in the oven for about 12-15 minutes until tender and slightly crisp.
While the broccoli is roasting, pat the salmon fillet dry with a paper towel.
Mix the chopped parsley, thyme, garlic powder, salt, and pepper together in a small bowl.
Brush the salmon with the remaining olive oil and press the herb mixture onto the top of the fillet, creating an even herb crust.
Heat a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side down if applicable, and sear for about 3-4 minutes until a crust forms.
Flip the salmon and cook for another 3-4 minutes, or until the salmon is opaque and cooked through.
Plate the seared salmon alongside the roasted broccoli and garnish with a lemon wedge. Squeeze the lemon over the dish before enjoying.
