INGREDIENTS
250g Extra-Firm Tofu
1/2 cup Shelled Edamame
1 cup Broccoli, chopped
1 medium Red Bell Pepper, sliced
1/2 cup Snow Peas
1 tbsp Sesame Seeds
1 tbsp Low Sodium Soy Sauce
1 tsp Honey
1 tsp Sesame Oil
1 tsp Rice Vinegar
1 tsp Fresh Ginger, grated
1 clove Garlic, minced
PREPARATION
Press the tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
In a small bowl, whisk together soy sauce, honey, sesame oil, rice vinegar, grated ginger, and minced garlic to make the glaze.
Toss the tofu cubes gently in half of the glaze, ensuring they are evenly coated.
Heat a non-stick skillet over medium-high heat and add the tofu cubes. Fry until all sides are golden and crispy, about 5-7 minutes.
Remove the tofu from the skillet and set aside. In the same skillet, add a splash of sesame oil if needed and stir-fry the broccoli, red bell pepper, and snow peas for about 3-4 minutes until they are crisp-tender.
Return the tofu to the skillet, pour in the remaining glaze along with the shelled edamame, and stir-fry for an additional 2 minutes to blend the flavors.
Plate the stir-fry and sprinkle with toasted sesame seeds. Serve immediately.
