1 cup Cauliflower (107g)
1.5 tsp Olive Oil (7g)
2 tbsp Parmesan Cheese (14g)
1 tsp Garlic Powder (2.8g)
1 tsp Mixed Dried Herbs
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F.
Pat the chicken breast dry and season both sides with salt, pepper, garlic powder, and mixed dried herbs.
Place the chicken on a lightly oiled baking sheet. Drizzle a portion of the olive oil over the chicken.
In a bowl, toss the cauliflower with the remaining olive oil, a pinch of salt and pepper.
Arrange the cauliflower around the chicken on the baking sheet.
Roast in the preheated oven for 20-25 minutes, until the chicken is cooked through and the edges are crispy.
In the last 5 minutes of roasting, sprinkle grated parmesan cheese over the cauliflower to let it melt and form a light crust.
