INGREDIENTS
5 oz Mahi Mahi Fillet
0.5 oz shelled Pistachios
1 large Egg White
0.5 medium Mango
0.25 cup chopped Red Bell Pepper
2 tbsp finely chopped Red Onion
2 tbsp Lime Juice
1 tsp Olive Oil
2 tbsp chopped Fresh Cilantro
Salt & Black Pepper to taste
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Place the pistachios in a small food processor and pulse until coarsely ground. Transfer to a shallow dish.
Pat the mahi mahi dry with paper towels and season both sides with salt and black pepper.
Lightly brush the fish with the egg white to help the pistachio crust adhere, then press the fish into the ground pistachios until evenly coated.
Place the crusted mahi mahi on the prepared baking sheet and bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
While the fish bakes, prepare the mango salsa: dice the mango and red bell pepper, finely chop the red onion and cilantro, and combine them in a bowl.
Add lime juice and a teaspoon of olive oil to the salsa, mixing well. Season with a pinch of salt and pepper to taste.
Once the mahi mahi is cooked, serve it immediately topped with a generous spoonful of mango salsa.
