INGREDIENTS
6 oz Grilled Shrimp
3/4 cup cooked Brown Rice
1/8 cup Pine Nuts
1 medium Red Bell Pepper, diced
1 small Yellow Onion, diced
2 cloves Garlic, minced
1 whole Lemon, zested and juiced
1 small Orange, juiced
1/2 cup Fresh Parsley
1/2 cup Fresh Cilantro
1 tsp Olive Oil
Salt & Pepper, to taste
PREPARATION
In a skillet, heat olive oil over medium heat and sauté diced yellow onion, red bell pepper, and minced garlic until soft and translucent.
Meanwhile, prepare the rice if not already cooked. Use pre-cooked brown rice or cook according to package instructions.
Add the cooked brown rice to the skillet. Stir in the zest and juice of lemon, and the juice of the orange, allowing the flavors to meld.
Fold in chopped fresh parsley and cilantro, and season with salt and pepper to taste.
Gently fold in the grilled shrimp until heated through. In a separate small pan, toast pine nuts over low heat until lightly golden and fragrant.
Sprinkle the toasted pine nuts on top of the pilaf just before serving.
Serve warm and enjoy the burst of citrus and herb-infused flavors in every bite.
