INGREDIENTS
5 oz Chicken Breast
1/2 Egg
2 tbsp Whole Wheat Panko Breadcrumbs
1 tbsp Cornstarch
1/2 Orange (juice)
1 Garlic Clove
1 tsp Fresh Ginger
1 tbsp Low Sodium Soy Sauce
1 tbsp Chopped Green Onions (garnish)
PREPARATION
Preheat your air fryer to 400°F.
Cut the chicken breast into bite-sized pieces if desired, or leave as a fillet for a crispier surface.
On a plate, sprinkle the cornstarch evenly. In a small bowl, whisk the half egg.
Lightly coat the chicken pieces in cornstarch, dip them into the egg wash, then dredge through the whole wheat panko breadcrumbs ensuring an even coating.
Place the coated chicken in a single layer in the air fryer basket. Lightly spray with cooking spray if needed for extra crisp.
Air fry the chicken for 10-12 minutes, turning halfway through until the chicken is cooked through and the coating is crispy.
Meanwhile, prepare the orange sauce by squeezing the juice from the half orange into a small saucepan. Add the finely minced garlic, grated ginger, and soy sauce. Simmer gently for 2-3 minutes until slightly thickened.
Once the chicken is done, transfer it to a serving plate and drizzle the warm orange sauce over the top.
Garnish with chopped green onions and serve immediately.
