A vibrant, savory dish featuring crispy tofu glazed with a tangy-sweet sesame sauce, paired with a colorful medley of ginger-infused stir-fried vegetables. This dish brings a satisfying crunch and balanced flavor profile perfect for any meal of the day.
INGREDIENTS
300g Extra Firm Tofu
1 tbsp Sesame Seeds
1 tbsp Extra Virgin Olive Oil
1 tbsp Low-Sodium Soy Sauce
1 tsp Honey
1 tsp Rice Vinegar
1 tbsp Fresh Ginger, minced
1 garlic clove, minced
1 cup chopped Broccoli
1 serving sliced Bell Pepper (approx. 75g)
1 small sliced Carrot
PREPARATION
Press the tofu to remove excess moisture, then cut into 1-inch cubes.
In a bowl, whisk together the soy sauce, honey, rice vinegar, minced ginger, minced garlic, and sesame seeds to create the glaze.
Heat olive oil in a non-stick skillet over medium-high heat. Add the tofu cubes and cook until all sides become crispy and lightly browned.
Pour the prepared glaze over the tofu and toss gently to coat evenly. Allow the tofu to cook in the glaze for another 2 minutes.
In a separate large pan or wok, add the chopped broccoli, sliced bell pepper, and carrot. Stir-fry the vegetables over medium heat until just tender yet still crisp, about 3-4 minutes.
Combine the glazed tofu with the stir-fried vegetables. Give everything a quick toss to blend the flavors.
Plate the dish and garnish with an extra sprinkle of sesame seeds if desired. Serve hot and enjoy!
