INGREDIENTS
1/3 cup Old-Fashioned Rolled Oats (~30g)
3 large Egg Whites (~100g)
1 medium Banana (approx 118g)
1/4 cup Nonfat Greek Yogurt (~60g)
1 scoop Vanilla Whey Protein Isolate (~30g)
1 tsp Baking Powder
1 tsp Coconut Sugar
1 tsp Vanilla Extract
1 pinch Salt
PREPARATION
Place the rolled oats in a blender and blend until they reach a flour-like consistency.
Add egg whites, nonfat Greek yogurt, vanilla whey protein isolate, baking powder, vanilla extract, and a pinch of salt to the blender. Blend until smooth.
Slice the banana lengthwise. In a small non-stick skillet over medium heat, sprinkle the coconut sugar and place the banana slices cut side down. Allow them to caramelize for 2-3 minutes until golden and sticky, then remove and set aside.
Preheat a non-stick griddle or skillet over medium heat. Lightly spray with cooking spray if necessary.
Pour batter onto the skillet forming small pancakes. Cook until bubbles form on the surface and the edges set, about 2-3 minutes, then flip and cook for an additional 2 minutes until cooked through.
Plate the pancakes and top with the caramelized banana slices. Serve warm.
