Preheat your air fryer to 400°F.
Slice the chicken breast into bite-sized pieces and pat dry.
In a shallow bowl, whisk the egg white. In another bowl, combine whole wheat breadcrumbs, orange zest, a pinch of salt, and pepper.
Dip each chicken piece first into the egg white, then coat evenly with the breadcrumb mixture.
Lightly spray the air fryer basket with cooking spray.
Place the coated chicken pieces in the basket in a single layer.
Air fry for 10-12 minutes, shaking the basket halfway through, until the chicken is cooked through and crispy.
While the chicken is cooking, in a small saucepan, combine fresh orange juice, minced garlic, and grated fresh ginger. Bring to a simmer over medium heat and let it reduce slightly, about 3-4 minutes.
Once the chicken is done, drizzle the orange glaze over the crispy chicken pieces or serve it on the side for dipping.
Garnish with additional orange zest if desired and serve immediately.
