INGREDIENTS
150g Cauliflower
1 Egg (50g)
30g Part-Skim Mozzarella Cheese
4 oz Chicken Breast
2 tbsp Buffalo Sauce
28g Low-Fat Mozzarella Cheese
1/4 Red Onion
PREPARATION
Preheat your oven to 425°F and line a baking sheet with parchment paper.
Rice the cauliflower in a food processor until it achieves a rice-like texture. Steam or microwave the cauliflower for 5 minutes until slightly tender, then place it in a clean towel and squeeze out as much moisture as possible.
In a bowl, combine the riced cauliflower with one beaten egg and 30g of part-skim mozzarella cheese. Mix well and press the mixture onto the baking sheet to form a thin, even crust.
Bake the cauliflower crust for 15-20 minutes, or until it starts to turn golden and crisp.
While the crust bakes, dice the chicken breast into small pieces and toss with 2 tablespoons of buffalo sauce.
Once the crust is ready, evenly spread the buffalo chicken over the crust. Sprinkle 28g of low-fat mozzarella cheese on top and add thin slices of red onion.
Return the assembled pizza to the oven and bake for an additional 8-10 minutes until the cheese is melted and bubbly.
Remove from the oven, let it cool slightly, and serve immediately.
