INGREDIENTS
2 cups cauliflower florets (214g)
1 medium potato (150g)
1/2 cup cooked chickpeas (82g)
1 cup nonfat plain Greek yogurt (245g)
6 cloves roasted garlic (18g)
1 tsp olive oil (5g)
Salt and pepper to taste
PREPARATION
Preheat your oven to 400°F.
Slice the top off a head of garlic, drizzle with olive oil, and wrap in foil. Roast in the oven for about 30-35 minutes until soft and fragrant. Once done, let cool and squeeze out the roasted garlic cloves.
Meanwhile, chop the cauliflower into florets and peel and dice the potato into cubes.
Steam the cauliflower and potato cubes until tender, about 15 minutes.
In a food processor or using a potato masher, combine the steamed cauliflower, potato, roasted garlic, and cooked chickpeas. Blend or mash until smooth and creamy.
Stir in the nonfat Greek yogurt, and season with salt and pepper to taste. Adjust thickness with a little water or broth if desired.
Serve warm as a comforting side dish or a light main meal.
