150g Baby Potatoes
1 tsp Unsalted Butter
1 tsp Olive Oil
1 garlic clove
1 tbsp Fresh Herbs (Rosemary & Thyme)
Salt & Pepper to taste
PREPARATION
Preheat the oven to 425°F (220°C) for roasting the potatoes.
Wash the baby potatoes and halve them if they are large. Toss in a bowl with olive oil, salt, pepper, and half of the chopped fresh herbs.
Spread the potatoes on a baking sheet and roast in the preheated oven for about 20-25 minutes until golden and tender.
While the potatoes are roasting, pat the steak dry and season both sides generously with salt and pepper.
Heat a skillet over medium-high heat. Once hot, add the steak and sear for about 3-4 minutes per side (adjust cooking time for desired doneness).
In the last minute of cooking, add the unsalted butter, minced garlic, and remaining herbs to the skillet. Spoon the melted herb-garlic butter over the steak.
Remove the steak from the skillet and let it rest for a few minutes before slicing.
