PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Peel and cut the carrots into uniformly sized sticks or rounds. Press the tofu gently between paper towels to remove excess moisture and then cube it into 1-inch pieces.
In a small bowl, whisk together the honey, olive oil, and mixed herbs. Season lightly with salt and pepper.
Toss the carrot pieces and tofu cubes separately in half of the honey-herb mixture, ensuring an even coating.
