INGREDIENTS
6 oz Large Shrimp
1 cup Cauliflower florets
1/2 cup Unsweetened Almond Milk
2 tbsp Nutritional Yeast
2 tsp Olive Oil
1 Garlic Clove
Pinch of Red Pepper Flakes
1 tbsp Lemon Juice
1 tbsp Fresh Parsley
PREPARATION
Rinse and pat dry the shrimp. Peel and devein if necessary.
Steam or microwave the cauliflower until tender. Once cooked, transfer to a blender and add the unsweetened almond milk and nutritional yeast. Blend until smooth to form a creamy grits base.
Heat 1 tsp of olive oil in a skillet over medium heat. Add the minced garlic and a pinch of red pepper flakes, then sauté until fragrant (about 30 seconds).
Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque. Squeeze lemon juice over the shrimp during the last minute of cooking.
While the shrimp cooks, warm the cauliflower grits in a small saucepan over low heat, stirring occasionally. Adjust thickness with a splash more almond milk if needed.
Serve the spicy garlic shrimp atop a smooth bed of creamy cauliflower grits. Garnish with freshly chopped parsley and an extra drizzle of olive oil if desired.
