INGREDIENTS
1 cup Cauliflower Florets (107g)
1 medium Potato (150g)
1.5 cups Plain Nonfat Greek Yogurt (367g)
3 cloves Roasted Garlic (approx. 9g)
1 tsp Olive Oil (4.5g)
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F for roasting the garlic.
Place unpeeled garlic cloves on a small piece of aluminum foil, drizzle with a little olive oil, wrap securely, and roast in the oven for about 20-25 minutes until soft and fragrant.
Meanwhile, steam or boil the cauliflower florets and chopped potato until both are very tender, about 15-20 minutes.
Once the garlic is roasted, squeeze the soft garlic out of its skin and transfer to a mixing bowl.
Add the steamed cauliflower and potato to the bowl, and mash until desired smoothness is reached. Incorporate the roasted garlic while mashing.
Stir in the plain nonfat Greek yogurt gradually until the mash is creamy. Adjust consistency with a splash of water or vegetable broth if needed.
Drizzle the remaining olive oil over the mash, and season with salt and pepper to taste.
Serve warm as a comforting side or a light main dish.
