INGREDIENTS
200g Portobello Mushrooms
6 oz Chicken Breast
1 tbsp Unsalted Butter
3 Garlic Cloves
2 tbsp Fresh Parsley
2 tbsp Fresh Thyme
Salt and Pepper to taste
PREPARATION
Preheat your oven to 400°F (200°C).
Clean the Portobello mushrooms with a damp cloth and slice them thickly.
Mince the garlic cloves finely and chop the fresh parsley and thyme.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Place the sliced mushrooms in a baking dish and drizzle the garlic butter over them. Sprinkle with chopped parsley, thyme, salt, and pepper.
Roast the mushrooms in the preheated oven for about 15-20 minutes, stirring halfway through, until they are tender and lightly caramelized.
While the mushrooms are roasting, heat a grill pan over medium-high heat. Season the chicken breast with salt and pepper and grill for 5-6 minutes per side, or until fully cooked and juices run clear.
Slice the grilled chicken breast into strips.
To serve, plate the roasted mushrooms and top them with the grilled chicken slices. Optionally garnish with an extra sprinkle of fresh herbs.
