150g Lean Ground Turkey
1 cup Cauliflower (107g)
1 medium Carrot
1/2 cup Green Peas
1/4 Onion
2 cloves Garlic
1/2 cup Low Sodium Chicken Broth
1 teaspoon Olive Oil
Salt & Pepper to taste
PREPARATION
Preheat your oven to 400°F.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 2 minutes.
Add the lean ground turkey to the skillet. Cook until the turkey is browned, breaking it up into small pieces.
Stir in the diced carrot and green peas, and pour in the chicken broth. Season with salt and pepper. Let the mixture simmer until the carrots are tender, about 5-7 minutes.
Meanwhile, steam the cauliflower until very tender, about 8-10 minutes. Then mash the cauliflower until smooth, seasoning with a little salt and pepper.
Spread the turkey and vegetable mixture evenly in a baking dish. Top with the mashed cauliflower, smoothing it out with a spatula.
