450g White Button Mushrooms
4 oz Large Shrimp (peeled and deveined)
1.5 tbsp Unsalted Butter
3 cloves Garlic
2 tbsp Fresh Mixed Herbs (Parsley & Thyme)

PREPARATION
Preheat your oven to 400°F (200°C).
Clean the mushrooms with a damp paper towel and halve or quarter them depending on size.
Mince the garlic cloves and coarsely chop the fresh herbs.
In a large oven-safe skillet, melt the butter over medium heat. Add the garlic and sauté until fragrant for about 1 minute.
Add the mushrooms to the skillet, season with salt and pepper, and toss to coat in the garlic-butter mixture. Roast in the oven for 12-15 minutes until the mushrooms are tender and slightly caramelized.
While the mushrooms roast, quickly sauté the shrimp in a separate pan with a drizzle of butter, salt, and pepper until they turn pink and are just cooked through (about 2-3 minutes per side).
Remove the mushrooms from the oven and sprinkle the fresh mixed herbs over them. Gently fold in the cooked shrimp.
