1 medium Sweet Potato (150g)
1/4 cup chopped Yellow Onion (40g)
1 Garlic Clove (3g)
1/2 cup Beef Broth (120g)
1/2 tsp Dried Rosemary
1/2 tsp Dried Thyme
Salt and Black Pepper to taste
PREPARATION
Preheat a skillet over medium heat and lightly sear the beef on all sides to lock in flavor.
Place the seared beef into a slow cooker. Add the chopped yellow onion, garlic clove, beef broth, dried rosemary, dried thyme, salt, and pepper.
Set the slow cooker on low and cook for 6-8 hours until the beef is tender and easily pulls apart.
Once cooked, remove the beef and shred it using two forks.
Meanwhile, peel and cube the sweet potato. Boil in water until tender, about 15-20 minutes.
