INGREDIENTS
5 large eggs
1/4 cup crumbled feta cheese
1 cup cherry tomatoes
1 cup fresh spinach
1/4 cup diced red onion
1 tsp extra virgin olive oil
1 tbsp mixed fresh Mediterranean herbs
Salt and pepper to taste
PREPARATION
Preheat the oven to 400°F.
In a small bowl, toss the cherry tomatoes with a pinch of salt, pepper, and half of the olive oil. Spread them on a baking sheet and roast for about 10 minutes until they soften and burst.
In a mixing bowl, whisk together the 5 eggs with the mixed herbs, salt, and pepper.
Heat the remaining olive oil in an oven-safe skillet over medium heat. Sauté the diced red onion until softened, then add the fresh spinach and cook until wilted.
Pour the egg mixture into the skillet over the vegetables. Sprinkle the crumbled feta evenly on top.
Gently stir in half of the roasted tomatoes, then arrange the remaining tomatoes on top.
Let the frittata cook on the stove for 2-3 minutes until the edges begin to set, then transfer the skillet to the preheated oven.
Bake for 8-10 minutes until the frittata is fully set and lightly golden on the top.
Remove from the oven, let rest for a couple of minutes, slice, and serve warm.
