INGREDIENTS
6 oz Lean Ground Beef
1 medium Red Bell Pepper
1 medium Zucchini
1 small Yellow Onion
1 tsp Olive Oil
2 cloves Garlic
1 tsp Dried Oregano
1 tsp Dried Basil
Salt and Pepper to taste
PREPARATION
Preheat your oven to 425°F.
Cut the red bell pepper, zucchini, and yellow onion into bite-sized pieces. Mince the garlic.
In a bowl, toss the chopped vegetables with olive oil, a pinch of salt, and pepper.
Spread the vegetables evenly on a baking sheet and roast in the oven for 15-20 minutes until tender and slightly charred.
While the vegetables roast, heat a large skillet over medium-high heat. Add the lean ground beef and cook until browned, breaking it up with a spatula.
Once the beef is nearly cooked, add the minced garlic, dried oregano, dried basil, and season with salt and pepper. Stir and let the flavors meld for another 2 minutes.
Once the vegetables are done roasting, add them to the skillet and gently mix to combine with the beef.
Taste and adjust seasonings as necessary. Serve warm and enjoy!
