PREPARATION
Preheat your oven to 375°F (190°C).
In a non-stick skillet, warm the olive oil over medium heat and gently sauté the chopped red onion until softened, about 2-3 minutes.
Add the fresh spinach to the skillet and cook until wilted, stirring frequently. Remove from heat and allow to cool slightly.
