200g Cauliflower
150g Potato
300g Nonfat Greek Yogurt
3 cloves Garlic
1 tbsp Olive Oil
Pinch of Salt
Pinch of Black Pepper
PREPARATION
Preheat your oven to 400°F (200°C).
Place the garlic cloves (with skin on) tossed in a drizzle of olive oil on a piece of foil. Wrap them and roast in the oven for about 25-30 minutes until soft and caramelized.
Meanwhile, cut the cauliflower into florets and peel and cube the potato.
Boil the cauliflower and potato in a pot of water with a pinch of salt until both are tender, about 15 minutes. Drain well.
Squeeze the roasted garlic out of its skins into the pot with the vegetables.
Mash the cauliflower, potato, and garlic together using a potato masher or an immersion blender until smooth.
Stir in the nonfat Greek yogurt. Adjust seasoning with salt and pepper to taste. If you prefer a looser consistency, add a splash of water or broth.
