PREPARATION
Preheat your oven to 425°F.
Press the tofu to remove excess moisture, then cut into 1-inch cubes.
In a bowl, toss the tofu cubes with half of the olive oil, a pinch of salt, and pepper.
On a baking sheet, spread the tofu cubes, chickpeas, sliced mushrooms, and broccolini.
Mince the garlic and drizzle it, along with the remaining olive oil, over the vegetables and tofu. Add lemon juice, salt, and pepper to taste.
