INGREDIENTS
200 grams Brussels Sprouts
170 grams Chicken Breast (Boneless, Skinless)
1 tbsp Olive Oil
1 tbsp Honey
1 tbsp Balsamic Vinegar
2 cloves Garlic
Salt & Black Pepper to taste
PREPARATION
Preheat the oven to 425°F. Trim the ends of the Brussels sprouts and slice them in half.
Toss the Brussels sprouts with half of the olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
Roast the Brussels sprouts for 20-25 minutes or until they start to crisp and turn golden, stirring halfway through.
While the sprouts are roasting, season the chicken breast with salt and pepper. Heat a grill pan over medium-high heat and brush with the remaining olive oil.
Grill the chicken breast for about 6-7 minutes per side or until fully cooked and nicely charred. Once done, slice the chicken into bite-sized pieces.
In a small saucepan over medium heat, combine the honey, balsamic vinegar, and minced garlic. Simmer for 3-4 minutes until the glaze thickens slightly.
Drizzle the honey-balsamic glaze over the roasted Brussels sprouts and toss to coat evenly.
Plate the glazed Brussels sprouts and top with sliced grilled chicken. Serve immediately.
