INGREDIENTS
300g Extra-Firm Tofu
65g Rice Noodles (dry)
1 tbsp Peanut Butter
1 tsp Sesame Oil
1 tbsp Fresh Ginger, grated
1 clove Garlic, minced
1 tbsp Low-Sodium Soy Sauce
1 tbsp Lime Juice
0.5 tsp Red Chili Flakes
2 tbsp Scallions, chopped
PREPARATION
Press the tofu to remove excess moisture and cut it into 1-inch cubes. Toss tofu cubes lightly in a pinch of salt and a drizzle of sesame oil.
Cook the rice noodles according to package instructions until al dente, then drain and set aside.
In a non-stick skillet over medium-high heat, add a little sesame oil and fry the tofu cubes until all sides are golden and crispy. Remove tofu and set aside.
In a small bowl, whisk together peanut butter, low-sodium soy sauce, lime juice, grated ginger, minced garlic, and red chili flakes to create the creamy sauce. If needed, add a tablespoon of warm water to adjust consistency.
Combine the cooked rice noodles and crispy tofu in a large bowl. Drizzle the creamy peanut-ginger sauce over, stirring gently to coat evenly.
Garnish with chopped scallions and serve immediately for a satisfying meal at any time of day.
