INGREDIENTS
6 oz Salmon Fillet
1 cup Asparagus
1 tbsp Extra Virgin Olive Oil
1 clove Fresh Garlic, minced
2 tbsp Fresh Parsley
2 tbsp Fresh Dill
1/2 tsp Salt
1/2 tsp Black Pepper
PREPARATION
Preheat your oven to 425°F.
Rinse the asparagus and trim the tough ends. Toss the asparagus with 1/2 tablespoon of olive oil, salt, and pepper. Spread them out on a baking sheet.
Roast the asparagus in the preheated oven for 10-12 minutes until tender.
While the asparagus roasts, pat the salmon fillet dry with a paper towel. In a small bowl, combine the minced garlic, chopped parsley, chopped dill, salt, and black pepper.
Lightly brush the salmon with the remaining 1/2 tablespoon of olive oil. Press the herb mixture onto the top of the salmon to form a crust.
Heat a nonstick skillet over medium-high heat. Once hot, add the salmon skin-side down (if applicable) and sear for 3-4 minutes until a crisp crust forms.
Flip the salmon and cook for an additional 2-3 minutes until the salmon is just cooked through.
Plate the salmon alongside the roasted asparagus and serve immediately.
