PREPARATION
Preheat a non-stick skillet over medium heat. Add olive oil.
Slice the yellow onion into thin rounds and add to the skillet. Cook slowly over medium-low heat, stirring occasionally, until onions become soft and caramelized, about 10-12 minutes. Remove and set aside.
