INGREDIENTS
40g Rolled oats
1 medium ripe banana (batter)
3 large egg whites
1 scoop (30g) Vanilla Whey Protein Isolate
1/2 cup Unsweetened Almond Milk
1/2 medium banana (topping)
1 tsp Coconut Oil
1 tsp Ground Cinnamon
PREPARATION
Blend the rolled oats in a blender or food processor until they form a flour-like consistency.
In a mixing bowl, mash the ripe banana and then add the egg whites, whey protein isolate, and unsweetened almond milk. Stir until fully combined.
Mix in the oat flour and ground cinnamon, stirring until smooth. Let the batter rest for 5 minutes.
Heat a non-stick skillet over medium heat and lightly coat with a small amount of coconut oil (reserve most for the banana topping).
Pour small portions of the batter onto the skillet to form pancakes and cook until bubbles form on the surface, then flip and cook until golden brown on both sides.
For the topping, in a separate small pan, heat the remaining coconut oil over medium-low heat, add the banana slices from the extra half banana, and lightly caramelize them for 1-2 minutes on each side.
Plate the pancakes and top with the warm, caramelized banana slices. Serve immediately and enjoy!
