INGREDIENTS
5 oz Sirloin Steak
150g Baby Potatoes
1 tsp Olive Oil
1 tsp Unsalted Butter
1 Garlic Clove
1 tbsp Fresh Herbs (Rosemary & Thyme)
PREPARATION
Preheat your oven to 400°F. Toss the baby potatoes with olive oil, salt, and pepper, and spread them evenly on a baking sheet.
Roast the potatoes in the oven for about 25-30 minutes until they are tender and lightly browned.
While the potatoes roast, pat the sirloin steak dry and season both sides with salt and pepper.
Heat a skillet over medium-high heat. Once the skillet is hot, add the steak and sear for about 3-4 minutes on each side for medium-rare, or adjust timing to your preferred doneness.
In the last minute of cooking, add the unsalted butter, garlic, and fresh herbs to the skillet. Spoon the melted herb-garlic butter over the steak continuously for added flavor.
Remove the steak from the skillet and let it rest for a few minutes before slicing.
Plate the sliced steak alongside the roasted baby potatoes, and drizzle any remaining herb butter from the skillet over the top.
