Enjoy a savory skillet where crispy mortadella meets perfectly baked eggs, complemented by fresh spinach, melty cheddar, and aromatic herbs. This dish strikes a delightful balance between textures and flavors, making it an appealing choice for any meal of the day.
INGREDIENTS
2 slices Mortadella (56g)
3 large Eggs (150g)
1 oz Cheddar Cheese (28g)
1 cup Baby Spinach (30g)
1 tsp Olive Oil (4.5g)
1 tbsp Fresh Herbs (Basil & Thyme)
PREPARATION
Preheat your oven to 375°F.
Heat a small oven-safe skillet over medium heat and add the olive oil.
Place the mortadella slices in the skillet and cook for 2-3 minutes until they begin to crisp up.
Add the baby spinach to the skillet and sauté until just wilted, about 1-2 minutes.
Make small wells among the mortadella and spinach, and gently crack the eggs into the skillet.
Sprinkle the cheddar cheese over the eggs and add the fresh herbs on top.
Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the egg whites are set but the yolks remain slightly runny.
Season with salt and pepper to taste, then serve immediately.
